Can there be a more satisfying one pot meal than a thick and steaming bowl of Scotch Broth. For Highlanders over a certain age this would have been a staple which varied, depending on what was available in the garden or what meat was available. Recipes vary enormously around the country but my mums is still obviously the best I’ve ever tasted.
We love traditional Scottish cooking here at TrueHighlands, but for a change this week we thought we would share something a bit more contemporary. Don’t panic, we are not about to start pulling pork or frying pizzas just yet. What we do have for you is a 19th century Scottish variation on the breakfast of the British Empire.
The lunch menu at Sutor Creek features a selection of locally sourced meats, vegetables and fish in addition to wood-fired pizzas. One of the most popular lunch dishes is the Smoked Haddock Fishcake served with a mustard sauce and seasonal vegetables. Fishcakes are a great family supper (kids love getting involved with the egging and breading part!) or make a smaller portion to serve as a starter for a dinner party.
